Easy Meals – Chicken Tortilla Stoup
I got this recipe from my mom, who got it from one of her co-workers, years ago. It was originally intended for slow cookers, but it works great in a stock pot. You may be wondering what a stoup is – it is a mix between a soup and a stew.
Ingredients
- 4 uncooked boneless, skinless, chicken breast OR 6 tenderloins (less cutting later)
- 2 – 15 oz cans of black beans, undrained
- 2 cans diced tomatoes/Rotel (seasoned or plain)
- 1 cup salsa
- 4 oz can diced green chilies
- 14 oz can of tomatoes sauce
- 14 oz can of tomatoes sauce
- 1 bag tortilla chips (optional)
- 1 bag shredded cheese
Directions
- Combine all ingredients, except chips and cheese
- Put in a slow cooker, cover and cook on low for 8 hours OR put in a large pan, cover and cook on low-medium for 1-2 hours.
- Just before serving, remove chicken and shred/ slice very small and stir back into stoup.
- To serve, put a handful of chips (optional) in each bowl and ladle stoup over chips. Sprinkle cheese on top and let melt.
- Enjoy!
One thing The Helpful Hubby and I like to do is make the dish more like gumbo and add rice to it. Of course, you could also add any other veggies that you like.
