Easy Meals – “Chicken Parmesan”

This is one of The Helpful Hubby and I’s favorite last-minute, easy dinners. Actually, I believe this idea was originally The Helpful Hubby’s. This “Chicken Parmesan” is meatless, but still tastes great so don’t be scared! My favorite thing about this dish is that I can always keep the ingredients on hand and make it when I’m feeling exhausted – no planning or grocery store shopping needed!

Serves 4


  • 1 jar Marinara or Pasta Sauce
  • 4 Slices Mozzarella Cheese (vegan mozzarella cheese will still melt the same)
  • 4 Boca Original Meatless Chik’n Patties (better than Morning Star Farms’ version we think)
  • 3/4-1 lb Spaghetti Noodles (I mix 1/2 Bariila Plus and 1/2 Barilla Classic)

  1. Cook noodles according to package directions, omitting any salt
  2. When you add the noodles to the pot, start cooking the Chik’n Patties, flipping them over occasionally for 12-14 minutes, making sure not to burn
  3. While patties are cooking warm sauce in a pot
  4. Just before patties are done, lay 1 piece of mozzarella cheese on the top to let it start melting
  5. Layer on plate from bottom up: noodles, patty (with mozzarella on top), sauce

When the noodles are cooking in the pot I usually start cooking a bag of frozen veggies (often times broccoli) in a pot to serve along with the “Chicken Parmesan.” If you don’t want to get a pot dirty to warm the sauce in you can just add the sauce to the plate at room temperature and microwave it for 1 minute.
